Switched Tuesday with Monday and had kids licking the plate of red lentils last night and the yogurt-marinated chicken was delicious tonight. Grocery store was out of couscous (#covidproblems) so we're going to try out the concept of quinoa cakes later in the week instead.

Quinoa cakes will totally work, Kelly! I find they're a little more delicate than cakes made with other grains, so just be careful cooking them. Glad to hear the red lentils were a hit--my guy wouldn't touch them, of course.
