Debbie, I am so excited we have comments now. I found myself wanting to chat with this community and now it's possible. Thank you!

I have an auto-immune disease so eat AIP compliant meaning no grains and no nightshades. In addition, I prefer to eat veg, though will eat fish a couple of times a week. AND, on top of all of that, I'm feeding 4 teenagers (and a husband). So, I use your's brilliant meal plans with modifications. I'll list them here each week as inspiration for other AIP or veg folks.

1. Sunday Prep - I'll cook the lentils in my instapot to get rid of the pesky lectins.

2. Monday Baked Potato Bar - I'll use potatoes for the kids and make cauliflower mash for the adults.

3. Tuesday - will follow the veg recipe but use cauliflower mash. The kids will be happy to eat it.

4. Wednesday - The kids won't eat omelets and the adults eat eggs for breakfast frequently, so I'll sub a quick prep meal. Most likely 10-minute sausage skillet dinner from Epicurious that Debbie introduced to me months ago. 4. Thursday - I'll split the soup before adding the pasta to make 2 versions. One with pasta for the kids and one subbing baby kale for the pasta for the adults.

5. Friday - We LOVE shrimp tacos. I'll use cassava tortillas for the adults to make it AIP compliant. I'll add an aquafaba sauce to give it some creaminess.

When I saw the heading, I thought the menu would not be one of my favorites, but this is a great and easy one! Thanks. My county, Albany, has not had any confirmed cases yet. Am guessing there are undiagnosed casees given the constant travel between here and Westchester, but in any case, I feel like I need to buy more stock just because everyone else is, and I am afraid there will be nothing left!

Tangentially - when I was a kid, there was a huge blizzard that closed down roads for a couple of weeks. We were able to walk to a grocery store with a sled. There is still lots of weird food left on the shelves, even when the store isn't getting deliveries. So you won't go hungry, but might be eating things that aren't enjoyable.
